Where chefs, gardeners, farmers, producers, artists, writers, and other creatives can escape, hide, breathe, energise, have time to dream, and, most importantly, grow, cook, and eat.

It will be an edible forest of old and new Irish flavours where you never know who you might meet, what you might taste, or what might happen, adding an element of excitement to your stay.

Fat Tomato will celebrate Irish artisanal craft but also have a nod to Anthony’s love of travel through its landscape design and architecture.

The Plan

Anthony has been working on his dream home for years, researching, stretching, and picking up ideas, garden seeds and beautiful craft pieces on his travels.

As they say, Good Things Take Time.

Anthony started his edible garden at the back of his parent's home in 2016 with a bigger plan to begin again. He has always wanted to create a space that celebrates his love for food, drink, and travel and share it with his eclectic mix of old and new friends, family, colleagues, and anyone who crosses his path in the future.

Plans are well underway looking for the new piece of land in the southeast that is full of character to be the new home of Fat Tomato.
