Who can resist a rich, mature plum pudding at Christmas?

Our 2024 Christmas pudding is the ultimate indulgence for the season. A decadent blend of boozy dried fruits, tart Bramley apples, and warming spices, with a nutty crunch from Spanish almonds and wild Irish hazelnuts. All held together with our delicious heritage eggs, Drumderry Irish flour, and Seagull Bakery sourdough crumbs. The deep, complex flavour becomes even more indulgent over time, offering a Christmas treat with every bite.

Anthony spent way too much time making these puddings, using a selection of organic dried fruits, alongside delicious ingredients from the Fat Tomato garden and local hedgerows—Bramley apples, stubbornly-to-crack wild Irish hazelnuts, candied peach Peregrine, Morello cherries, and the Minnesota Midget melon—all preserved in organic raw cane sugar. His signature winter spice blend includes fennel and coriander seeds from the garden, paired with organic spices like Indonesian nutmeg, Ceylon cinnamon, Mexican allspice, Madagascar cloves, Peruvian ginger root, and Kampot black peppercorns.

After months of macerating the luscious fruits in Highbank Orchard’s organic apple brandy and Dungarvan Brewing Company’s aged Black Rock stout, these puddings were steamed in November 2023 and left to mature, allowing the flavours to deepen and meld together. So good, you'll find yourself sneaking slices cold at midnight, perhaps paired with a bit of sweet Cashel Blue cheese and a glass of Tawny Port.
