Mature Plum Pudding
Who can resist a mature plum pudding at Christmas?
The ultimate festive indulgence, our puddings are a rich blend of boozy dried fruits, tart Bramley apples, and warming spices, with a nutty crunch from Spanish almonds and wild Irish hazelnuts. They are all bound with our delicious eggs, Drumderry Irish flour, and Seagull Bakery sourdough crumbs. The deep, complex flavour becomes even more indulgent over time, offering a Christmas treat with every bite.
Anthony spent way too much time making these puddings, using lots of organic dried fruits and some delicious ingredients from the Fat Tomato garden and surrounding hedgerows—Bramley apples, stubbornly-to-crack wild Irish hazelnuts, candied peach Peregrine, cherry Morello, and melon Minnesota Midget—all preserved in organic raw cane sugar. Each year, Anthony creates his signature winter mixed spice blend with fennel and coriander seeds from the garden, plus other warming organic spices like Indonesian nutmeg, Ceylon cinnamon, Mexican allspice, Madagascar cloves, Peruvian ginger root, and Kampot black peppercorns.
After months of macerating a mix of luscious dried fruits in Highbank Orchard’s organic apple brandy and Dungarvan Brewing Company’s aged Black Rock stout, these puddings were steamed in November 2023 and left to mature so the spices, fruit and booze get to spend some time together. The puddings are so good, you'll find yourself eating slices cold at midnight, perhaps paired with a bit of sweet Cashel Blue cheese and a glass of Tawny Port.
Available in two sizes, with only 20 puddings available for 2024.
Each pudding is wrapped in John Louden’s Christmas-printed cloth and accompanied by a jar of Salt Rock Dairy’s handmade Brandy Butter (a micro-dairy based 20 minutes up the road from us in Wexford) and Anthony’s signature branded matches.
