Blackcurrant Vinegar
Our kitchen pantry has lots of vats and barrels with fruits, herbs, and vegetables maturing away. We macerate some in organic raw cane sugar, local raw honey, or our heritage apple cider vinegar, some with organic spices and herbs, while others are left to Mother Nature to do its thing with wild yeast and time.
One of the things we wanted to make was a vinegar that would capture the taste of Wexford. A vinegar beautifully takes on the essence of the fruit, reminding us of the season it was harvested. Like wine, good vinegars take time to make.
Wexford is known for its soft fruit growing. We are renowned for our strawberries, but it is all about the blackcurrants for Anthony. They are tart and jam-packed, full of flavour. The fertile soil and mild, Sunny Southeast weather make our blackcurrants stand out from the crowd.
We grow two types of blackcurrants here at Fat Tomato: Triton and Ben Tinania. The size, flavour, and harvest vary; one is more sweet and jammy, while the other is higher in acidity. It is always fun near harvest time as the wild birds always find ways to get through the netting to feast on the currants before we can!
The flavour of blackcurrant goes well with so many things. This vinegar is designed to give a flavourful tang to sauces, salads, and desserts. It will also be delicious in drinks. We will have more recommendations when the vinegar is ready to bottle and sell.
We plan to launch the 2022 harvest sometime in 2025.
