Gooseberry Pickle
Anthony LOVES gooseberries so much that he has hidden them from plain sight in the garden. Three varieties grow behind the polytunnel on the ditch, making them easy to see under those pesky, thorny branches. The Hinnonmaki Yellow variety produces greenish-yellow fruits with a delicious aromatic flavour with a hint of apricot; the Hinnonmaki Red variety grows medium to large, deep wine-red, sweet, and very juicy gooseberries; and the prolific Invicta produces smooth-skinned green sour fruits that retain their shape when cooked, making excellent pies and preserves.
That Fat Tomato pantry is full of gooseberry products. Gooseberries are delicious in many forms, including jams, chutneys, drinks, and pickles. We have a couple of things maturing with gooseberries in them, including two types of pickles, one inspired by the sour Indian Alma pickle.
We hope to launch them in 2025.
