


Gooseberry Pickle
Bold, bright, and full of bite.
Gooseberries are one of Anthony’s all-time favourites - so much so that he’s tucked the bushes away in a quiet corner of the garden, safely out of sight from curious visitors (and hungry birds). At Fat Tomato, we grow three distinctive varieties: Hinnonmaki Yellow, with its greenish-yellow skin and fragrant, apricot-like flavour; Hinnonmaki Red, which ripens to a deep wine-red and delivers sweet, juicy fruit; and Invicta, a sharp, green variety that holds its shape beautifully when cooked.
Last summer’s harvest was quietly preserved and pickled - and after months of maturing in the pantry, we’re finally getting ready to launch two bold new gooseberry condiments.
One is inspired by the sour, spiced flavours of Indian-style Amla pickles. The other is a Fat Tomato original, made with gooseberries pickled in our spiced apple cider vinegar.
Expect tart, layered, and lively flavours - the kind that lifts everything from roast meats to sharp cheeses.
