Chilli Pepper Flakes

At Fat Tomato, we grow different types of chillies and peppers every year. Some yield enough to play with, while others might give us a handful for our own kitchen use.

One of our favourites to grow yearly is lemon drop chilli, which has a nice citrusy kick. We use it for lots of things here. Other chillies and peppers we grow are Habanero, Jalapeno, Tequila, Tabasco, Pantos, Poblano, Padron, Love Apple, Goat Horn, Hankham Horn, Serrano, Habanada, and Yolo Wonder to name a few. Some are pickled, some are dried, some are used to make sauces and salsas, and some are stuffed and fried for our dinner.

Each year, we make a different blend of chilli pepper flakes depending on the flavour and ripeness of the fruit from the chilli and pepper plants.

This chilli pepper blend is from the 2024 harvest. Some were picked when ripe, while others were picked when green to bring those fresh, grassy, tangier notes. The blend includes three chillies (Lemon Drop, Red Habanero, De Cayenne) and one sweet pepper (Hankham Horn). We dry them separately in a dehydrator, crush them, and make a blend. It is mild in heat and jam-packed with flavour—fruity, earthy, and a little smoky.

A little goes a long way. If you get a jar, savour it. The 2024 harvest was very poor due to the lack of sun. I'm keeping my fingers crossed for 2025.

We only have 14 jars for sale, as we need to keep the harvest to spice up some of our pantry products.

25g glass cork jar presented in our beautiful black box.
