Peach BBQ Sauce
At Fat Tomato, we grow two varieties of peaches, Peregrine and Johnny Brack, in our polytunnel to protect them from the unpredictable Irish weather. They grow at either end, arching over the doorways.
The Peregrine variety is among the best English varieties, and it can be found in many old walled gardens in Ireland and the UK. The tree produces an abundance of juicy, white-fleshed peaches with light green and crimson skin and an excellent sweet floral flavour. The peaches do not last long, so we must act quickly to preserve them.
Who doesn’t love a good barbecue sauce? We have been working on this sauce for some time, as the sweetness of peaches works so well with tomato, allspice, and a little smoke from our chilli flake blend. The tanginess from Highbank Orchard's organic apple syrup and some Tipperary Watershed Single Malt aged in first-fill bourbon casks make this barbecue sauce sing.
Due to the late frost this year, the peach blossoms got knocked off before being pollinated, so the harvest was smaller than in 2023. We only made 97 and a half bottles for 2024. The sauce is very popular in our honesty shop, but we have reserved some for the online store.

This sweet and tangy peach BBQ sauce can be served with many dishes. It is the perfect consistency as a dipping sauce for chips and a marinade for fish, meats, and vegetables.
When the bottle is nearly empty, we love making sticky chicken wings by adding water to it to extract all that sticky goodness.
