Peach Vanilla Syrup

At Fat Tomato, we grow two varieties of peaches, Peregrine and Johnny Brack, in our polytunnel to protect them from the unpredictable Irish weather. They grow at either end, arching over the doorways.

The Peregrine variety is among the best English varieties, and it can be found in many old walled gardens in Ireland and the UK. The tree produces an abundance of juicy, white-fleshed peaches with light green and crimson skin and an excellent sweet floral flavour. The peaches do not last long, so we must act quickly to preserve them.

We designed this peach syrup with drinks, ice cream, and pancakes in mind. The sweet floral flavours of peaches go so well with honey and vanilla. For the honey, we have used Tara Hill blossom honey, which is harvested 20 minutes up the road from us. As Mexico is the birthplace of vanilla, we had to use the best from there—sourced from our good friends at Picado Mexican, Ireland’s leading Mexican Grocer in Dublin.

Due to the late frost this year, the peach blossoms got knocked off before being pollinated, so the harvest was smaller than in 2023. We only made a few litres of syrup.

  • A little goes a long way. Delicious over pancakes, waffles, or vanilla ice cream; in cocktails, tonic, or sparkling water; or in iced tea. We also love making iced milky coffee for hot summer days in the garden.
