Sorrel thrives in acid soil in a sunny spot. Sow in modular trays in peat-free seed compost or directly into their final place in the garden. The seeds will germinate after 7 to 14 days and grow quickly from there. They need very little care.

Add young leaves to give salads a citrusy lift. Make a sorrel sauce, which is a beautiful accompaniment to new potatoes, fish, or vegetable fritters. We love making a sorrel soup with it.
Because sorrel contains oxalic acid, it should not be cooked in uncoated copper or aluminum pans. The acid will react with the metal and discolour the food.
