Cucurbita Pepo
Bred by Carol Deppe and Nate France, the Candystick Dessert is a larger variety of Delicata squash, producing elongated fruits with appealing cream-orange skin and green ridged stripes. The flesh is firm, yellow, and incredibly sweet—reminiscent of sweet potatoes or, some say, Medjool dates. This variety also stores well throughout the winter.

To ensure the best germination, the temperature must be at least 20°C. Sow seeds point-side down, 1.5 cm deep, in small pots with peat-free compost. Plant outdoors 90 cm apart from late May, once frosts have passed.
Sow indoors: April to early June

This squash is ideal for baking, thanks to its excellent sweet taste and firm texture. Many chefs love cooking with it during winter, celebrating it as a standout dish ingredient. We love roasting it, skin on, with garlic, olive oil, and fresh sage, then serving it warm or cold with goat’s cheese, candied pecans, and a few bitter leaves, like radicchio.
