Wild Strawberry Rose Cordial

Wexford is well-known for its strawberries, with roadside huts popping up during the summer months. Anthony has fond childhood memories of picking strawberries in fields among rows of straw. Today, though, most strawberries are grown in polytunnels, which, while efficient, do not quite taste the same. Many are cultivated in grow bags pumped with artificial fertilisers for yield, not flavour.

At Fat Tomato, we grow three varieties of strawberries outdoors along both sides of our polytunnel. The first is the popular Elsanta variety, known for its juicy, large fruits. The second is Ostara, a long-cropping variety with a flavour reminiscent of wild strawberries. Finally, we grow the Queen of the Valley wild strawberry, a highly aromatic alpine variety. Wild strawberries are a real treat; they were once found growing widely in hedgerows and woodlands across Ireland. Much smaller than the common strawberries found in supermarkets, they are darker in colour and similar in size to raspberries.

This wild strawberry rose cordial is made with Queen of the Valley and Ostara strawberries, fragrant rose petals from our garden, a pinch of Wexford sea salt, and organic Verna lemons sourced through the CrowdFarming platform. It’s a fantastic way to support small-scale farmers—many of whom are second- or third-generation growers—who cultivate their crops organically along the Mediterranean. We source all our citrus from this platform and connect directly with the growers.

The cordial is intensely fragrant, with a unique balance of flavours. Cordials differ slightly from syrups in that they contain an acid (like citrus) and a pinch of sea salt, which enhances their natural goodness. Over time, the cordial will naturally ferment a little, so do not be alarmed by any tiny bubbles in the bottle. Just give it a shake before using, as the wild yeast tends to settle at the top.

  • It is delicious with still, sparkling, or soda water (1 part cordial to 6 or 7 parts water). We love drizzling this cordial over thick natural yoghurt, porridge, or ice cream, adding it to cocktails, or simply serving it with Poacher’s Tonic.
