Who doesn’t love asparagus? Every year, we cannot wait for the season to kick in, which lasts about eight weeks here in Ireland. One of our favourite snacks while working in the garden is asparagus. If it reaches the kitchen, we love it with poached eggs or some spring lamb or in a soup, frittata, or risotto.
