Also known as Mexican Banana and Plymouth Rock, this is a pinkish-orange American heritage winter squash variety. Elongated in shape with firm, sweet yellow-orange flesh. It can trail for nearly 3 metres, producing an abundance of fruit. It stores well over the winter.

To ensure the best germination, the temperature must be at least 20C. Sow the seed point-side down 1.5 cm deep in small pots in peat-free compost. Plant outdoors 90 cm apart from late May to avoid frosts.

This squash is ideal for baking due to its excellent, sweet taste and firm, floury texture. It can also be used in soups and stews or roasted as a savoury vegetable.
We love making an old-fashioned pumpkin pie using Highbank Orchard organic apple syrup (made in Kilkenny) instead of maple syrup.
