With its rich, sweet chestnut-like flavour, this squash is incredibly versatile. You can roast it whole, cut it into wedges, or scoop out the flesh for soups, pies, or purées. Perfect for stuffing with grains or savoury fillings. For a simple yet delicious side dish, we love roasting it in wedges with salted butter, extra virgin olive oil, flaky sea salt, and fresh rosemary.
